A Bold New Voice in the Lowlands

Set on the scenic Ayrshire coast, Ailsa Bay Distillery brings a high-tech edge to Scotland’s famously gentle Lowland whisky style. Built in 2007 by William Grant & Sons, the distillery is part of the larger Girvan complex — but don’t let the industrial setting fool you. This place is quietly turning out some of the most intriguing whiskies in the region.

While most Lowland distilleries lean into soft, floral styles, Ailsa Bay goes in a different direction. Think smoky. Think sweet. Think high-precision whisky that’s made using scientific methods most distilleries haven’t even considered.

This is where peat meets pixel. Ailsa Bay uses micro-maturation in small casks to get early flavour impact, and it literally measures its sweetness and smoke in parts per million. It might sound a bit nerdy, but the results are pretty stunning.

Ailsa Bay has carved out a niche all of its own. It’s heavily peated — yes, even more than some Islay malts — but also surprisingly sweet, with notes of vanilla, spice, and oak coming through clearly.
