Bimber, England. Founded in 2015

London’s Modern Malt Maker

If you're surprised to hear of a whisky distillery in the heart of London, meet Bimber. Founded in 2015, it’s one of the few modern distilleries in England making true single malt whisky—from grain to glass—in the city. Bimber combines craftsmanship, tradition, and local sourcing to produce boutique whiskies that surprise people used to Scotch. Their ethos: small batches, traditional methods, and bold flavour in a modern context.

The founders named it “Bimber,” which means “moonshine” in Polish, reflecting the founder’s heritage and nodding to distilling roots beyond borders. Starting from scratch—with their first casks filled in May 2016—they launched their first whisky, The First, in 2019. Since then, they’ve expanded their range, experimenting with virgin oak, sherry, peated barley, and London character.

• In some expressions, a gentle peat smoke (e.g. their The 1st Peated), adding depth without dominance

Visitor Experience & Tours

Yes, Bimber offers distillery tours and tastings:

  • Their Whisky Connoisseur Experience usually lasts around 120 minutes.

  • The tour includes a welcome whisky cocktail, behind-the-scenes access to mashing, fermentation, distillation, maturation, and a tasting of several cask expressions.

  • Tours are offered on Thursdays and Fridays at 6:00 pm, and Saturdays at 12:00 and 2:30 pm.

  • The facility is designed to be accessible: flat access, minimal steps required.
