A brief History
Bonnington, Lowland Region, Scotland. Founded in 2019.
Bonnington Distillery is one of Scotland's newest whisky producers and the first single malt whisky distillery to be established in Edinburgh for almost a century. Located in the city's historic Leith district, the distillery combines modern whisky production with a strong connection to Edinburgh's rich brewing and distilling heritage.
Founded in 2019 by husband-and-wife team Claire and David Moore, Bonnington was created with the ambition of producing premium single malt whisky in the heart of Scotland's capital. The distillery takes its name from Bonnington Road, the area where it is based, and sits close to the Water of Leith, which has played an important role in Edinburgh's industrial history for centuries.
Production began shortly after construction was completed, with the first spirit running from the stills in 2019. While the distillery's own single malt is still relatively young compared with many established Scottish producers, Bonnington has quickly built a reputation through its cask programmes, visitor experiences and commitment to small-batch production.
Today, Bonnington represents a new chapter in Edinburgh's whisky story and is helping re-establish the city as a whisky-making destination.
