A brief History
Daftmill, Lowlands Region, Scotland. Founded in 2005
The Lowland Farm That Makes Whisky on Its Own Terms
Daftmill isn’t your usual Scotch whisky distillery. It’s hidden away on a family-run farm in Fife, Scotland — where barley isn’t just a buzzword, it’s actually grown in the fields next door. This is a distillery that works to the rhythm of farming life. Owned and operated by brothers Francis and Ian Cuthbert, Daftmill only distils whisky during the quieter parts of the farming calendar — after the barley is harvested and the cows are sorted.
Established in 2005, Daftmill quietly produced spirit for years before releasing its first bottling in 2018. Since then, it’s developed a cult following for its limited-edition, seasonal single malts. Each bottle reflects the hands-on, small-batch approach the Cuthberts take — with homegrown barley, local water from their artesian well, and a commitment to quality over quantity. If you’re into whisky that’s all about authenticity, patience, and serious attention to detail — this is one to watch.

Daftmill is known for its delicate, light, and balanced Lowland style. Think crisp green apples, soft pear drops, and sweet maltiness layered with gentle vanilla and oak spice. The whiskies are often matured in ex-bourbon casks, keeping the focus on freshness and subtlety rather than big, bold sherry or peat influences. These are whiskies made to reflect the land they come from, without any fuss.
