A brief History
Daiking, China. Founded in 2016.
Daiking Distillery is part of the growing whisky industry in China, representing one of the early attempts to produce single malt whisky in mainland China. The distillery is located in Pinghe County in Zhangzhou, Fujian Province, on the slopes of Daqin Mountain. The elevated mountain location was chosen to create cooler conditions for whisky maturation compared with the warmer lowland climate nearby.
The distillery project was developed by Wu Songbai, an entrepreneur originally from Taiwan, who set out to create a whisky distillery that combined modern production technology with a scenic tourism destination. Distillation began around 2016, and the distillery has since released several young single malt whiskies as part of the emerging Chinese whisky category.
The site itself is designed not only for whisky production but also as a cultural attraction, combining distilling facilities with visitor areas that highlight the surrounding mountain landscape and the distillery’s development.

Daiking whiskies tend to show a light and approachable flavour profile. Orchard fruit notes such as apple often appear alongside honeyed sweetness and soft vanilla from oak maturation.
As the whisky develops in the cask, gentle spice and oak influence emerge, giving the spirit a balanced finish. Because Chinese whisky production is still relatively young, many releases are bottled without long ageing periods and focus instead on fresh fruit character and smooth texture.

Significance
Daiking Distillery represents one of the earliest modern single malt distilleries in mainland China. Its development reflects the rapid growth of whisky interest across Asia and the emergence of new whisky-producing regions outside traditional centres such as Scotland, Ireland, and Japan.
Although still young compared with established whisky producers, Daiking is part of the first generation attempting to establish Chinese single malt whisky on the global stage.
