A brief History

Dallas Dhu: Speyside's Time Capsule of Whisky Heritage

Tucked away in Forres, Moray, in the heart of Speyside, Dallas Dhu is not your average distillery. It's a snapshot of what whisky once was — not just in taste, but in method, atmosphere, and character. Founded in 1898, Dallas Dhu fired up its stills in 1899 to supply malt whisky for blends. For nearly a century, it produced whisky the old-fashioned way — no frills, no flash, just good honest malt.

But the 1980s weren’t kind to the whisky world. Overproduction, changing tastes, and economic challenges meant Dallas Dhu had to close its doors in 1983. Thankfully, rather than being demolished or forgotten, it was preserved — and today stands proudly as a historic whisky museum. Visitors can walk through the distillery as it would have been when the last cask was filled.

The really exciting bit? There are now plans to bring Dallas Dhu back to life as a working distillery. If that happens, it could become the only place in Scotland where you can both see whisky’s past and taste its present — all in the same place.

Dallas Dhu is known for its soft, rich and rounded profile. It’s the kind of whisky that doesn’t shout — it speaks in warm, mellow tones. Expect a sturdy malt backbone, with touches of toasted cereal and honeyed sweetness. The fruitiness leans towards dried figs and raisins, often layered with notes of gentle oak, spice and sometimes a whisper of dark chocolate. This is Speyside in classic form — comforting, full-bodied, and built to age gracefully.

Visitor Centre

Yes – Dallas Dhu has been open to the public as a museum and heritage site for decades. Visitors can take a self-guided tour through the malt barns, tun room, still house, and warehouse. It’s one of the few places in Scotland where you can see a full whisky production line frozen in time.

Visitor Centre Opening Times (subject to seasonal change):

  • Summer: Typically 9:30 am to 5:30 pm

  • Winter: Limited hours, often 10 am to 4 pm (closed certain days)

With plans to reopen the distillery for production, the visitor experience may soon evolve into something even more immersive — blending the museum feel with the buzz of a working still room.

  • Founded: 1898 by Alexander Edward (though he sold it before it opened)

  • Original Name: Dallasmore

  • Early Ownership: Sold to Wright & Greig Ltd., who changed the name to Dallas Dhu

  • 1921: Acquired by Benmore Distilleries

  • 1929: Passed to Distillers Company Ltd (DCL), which later became part of Diageo

  • 1983: Closed due to unreliable water supply and the whisky downturn

  • 1986: Taken over for preservation

  • 1988: Opened to the public as a historic distillery and whisky museum
