A brief History
Holyrood, Lowlands Region, Scotland. Founded in 2019.
Holyrood is part of Edinburgh’s whisky revival. For decades, Scotland’s capital didn’t have an active single malt distillery in the city centre. Then in 2019, Holyrood opened its doors just off the Royal Mile, within sight of Arthur’s Seat.
This isn’t a heritage site dusted off for tourists. It’s a modern working distillery built with experimentation in mind. The team focuses heavily on flavour creation at every stage — yeast strains, barley varieties, fermentation length, and cask selection. You get the sense they care as much about brewing science as they do about whisky tradition.
Before their own spirit reached maturity, Holyrood released a range of gins and new-make spirit to showcase their approach. Now their single malts are emerging, and they lean modern rather than traditional.
