A brief History
InchDairnie, Lowlands Region, Scotland. Founded in 2015.
Mannochmore Distillery is one of those Speyside distilleries that quietly does a lot of work without drawing much attention to itself. It sits just outside Elgin in Moray, and it was built in 1971 during a period when Scotch whisky demand was rising quickly.
From the start, Mannochmore was designed to supply malt whisky for blends rather than to stand out as a single malt brand. It has long been linked to the Haig blends, and even today, most of what it produces disappears into blended Scotch.
That said, Mannochmore has had a few moments in the spotlight. The most talked-about was the release of Loch Dhu in the 1990s — a very dark whisky that became more of a curiosity than a classic. More recently, official releases like the Flora & Fauna bottling have given people a clearer idea of what the distillery can do.
It’s not a headline distillery, but it’s a reliable Speyside workhorse with a clean, approachable style.

| Malty / Cereal | Oaky / Woody | Spicy |
InchDairnie’s whisky often leans into structure and spice. You’ll typically find a strong cereal base, with biscuit and toasted grain notes coming through clearly.
Rye-based releases, such as RyeLaw, add a noticeable spice element — think pepper, clove, and warming oak. The whisky feels quite focused and deliberate, with flavours that build steadily rather than hitting all at once.

Distillery Facts
Overview & History
InchDairnie Distillery is located in Fife, Scotland, and was founded in 2015 by Ian Palmer, a former industry expert with experience at Invergordon and Glenmorangie.
The distillery was designed as a modern, innovation-led facility, combining traditional whisky-making principles with advanced engineering and process control. From the outset, InchDairnie aimed to push beyond standard Scotch production methods.
Unlike many new distilleries, it was built with large-scale capacity and long-term innovation in mind rather than purely craft positioning.
Production
- Spirit Type: Single malt and rye whisky
- Stills: Includes a Lomond Hill still (with adjustable plates)
- Mash System: Uses a mash filter rather than a traditional mash tun
- Grain Focus: Significant emphasis on rye whisky production
- Cask Policy: Primarily ex-bourbon, with additional experimental casks
The use of a mash filter and Lomond-style still allows for greater control over extraction and spirit character.
Whisky Style
InchDairnie whisky typically shows:
- Clean, structured spirit
- Spice-forward character (especially in rye releases)
- Vanilla and light oak
- Subtle fruit notes
- Precise, modern profile
The distillery focuses on clarity and consistency rather than heavy traditional styles.
Key Expressions
- Ryelaw – InchDairnie’s flagship rye whisky (Scotch rye)
- Future single malt releases (still maturing)
- Limited experimental releases
Ryelaw is one of the few modern Scotch whiskies built specifically around rye.
Significance
InchDairnie represents a new generation of Scotch distilleries focused on process innovation. Its use of mash filters, Lomond-style stills, and rye grain production sets it apart from traditional Scotch producers.
It is also one of the leading examples of the revival of rye whisky in Scotland, a category that had largely disappeared before recent experimentation.
