A brief History
Milk & Honey, Israel. Founded in 2014.
Milk & Honey Distillery helped put Israeli whisky on the global map. Founded in 2014 in Tel Aviv, it was the first modern whisky distillery in Israel dedicated to producing single malt whisky at scale.
The distillery was created by a group of whisky enthusiasts who believed Israel’s climate could produce distinctive whisky. The hot Mediterranean environment means whisky matures much faster than in Scotland. Casks expand and contract more frequently, pushing spirit deeper into the wood and accelerating flavour development.
Milk & Honey also worked with the late whisky expert Dr. Jim Swan, a well-known consultant who helped design distilleries around the world. His influence shaped the distillery’s early approach to fermentation, distillation, and cask selection.
The result is whisky that feels modern and expressive, with bold flavour even at relatively young ages.

Overview & History
Milk & Honey Distillery is located in Tel Aviv and was founded in 2014, becoming Israel’s first whisky distillery. The project was led by entrepreneur Gal Kalkstein with the goal of creating a world-class single malt whisky in a completely new whisky-producing region.
Production began in 2015, and the distillery received early guidance from the late Dr. Jim Swan, a respected whisky maturation expert who advised many modern distilleries around the world.
Milk & Honey quickly gained international attention for demonstrating that high-quality single malt could be produced in a hot Middle Eastern climate.
