From Pedro Ximénez and Port, to rum and Tokaji (yes, really), Murray McDavid isn’t afraid to push the boundaries. Their whiskies are carefully matured and then "ACE’d" — short for Additional Cask Enhancement — to bring out unexpected flavours in familiar drams. Today, they work from the historic Coleburn Distillery site in Speyside, selecting, finishing and bottling whisky with flair, precision, and just a little swagger.
