A brief History

Waterford, Ireland. Founded in 2015.

Waterford Distillery: Irish Single Malt with a Barley Obsession

Waterford Distillery is based in County Waterford, Ireland, and it sits firmly in the modern wave of Irish whisky — but with a very specific focus. This isn’t about triple distillation softness or easy blends. Waterford is about barley, farms, and flavour differences you can actually taste.

Founded in 2015 by Mark Reynier (formerly of Bruichladdich), Waterford was built around one idea: that barley variety and farm origin matter just as much as region does in wine. The distillery works with individual Irish farms and bottles whiskies that often highlight a single farm’s crop. That’s unusual. Most distilleries blend barley from multiple sources without mentioning it.

For UK drinkers who enjoy single malt Scotch and want something intellectually interesting — but still drinkable — Waterford offers a different angle. It’s Irish single malt, but structured, cereal-driven, and often bottled at higher strengths than traditional Irish whiskey.

It doesn’t try to be smoky or flashy. It tries to show grain character clearly.

Taste Profile

Fruity

Oaky / Woody Malty / Cereal

Waterford is known for a malty, structured, and cereal-forward Irish single malt style, often with fresh fruit and layered oak.

You’ll often notice fresh barley notes upfront — almost like warm cereal or baked bread — followed by orchard fruit and controlled oak. The finish is usually dry, structured, and clean rather than sweet and soft.

Distillery Facts

Overview & History

Whittaker’s Distillery is a family-run English distillery based in North Yorkshire, near Harrogate, founded by Toby and Jane Whittaker. The business originally focused on gin before expanding into whisky production.

The distillery began whisky production in 2019, becoming part of the expanding modern English whisky category.

The distillery operates from a rural farm setting and places strong emphasis on Yorkshire provenance, local barley, and spring water sourced on-site.

Production

  • Spirit Type: English single malt whisky
  • Location: Nidderdale, North Yorkshire
  • Scale: Small-batch craft production
  • Water Source: Harewell Spring
  • Cask Policy: Primarily bourbon cask maturation with experimental finishes

Whittaker’s produces whisky using local ingredients and non-chill-filtered presentation.

Whisky Style

Whittaker’s whisky typically shows:

  • Malt-forward character
  • Vanilla and caramel sweetness
  • Orchard and tropical fruit notes
  • Gentle spice
  • Soft oak influence

Early releases have been noted for a fruity and modern English whisky style.

Key Expressions

  • 2024 First Edition English Single Malt – Initial major whisky release
  • PX and peated cask-finished limited editions
  • Small batch seasonal releases

The early releases have focused on limited production rather than a large permanent range.

Significance

Whittaker’s is part of the growing English whisky revival, particularly the rise of smaller regional distilleries outside traditional Scotch whisky regions.

Its focus on local Yorkshire production and small-batch whisky reflects the broader movement toward provenance-driven English whisky.
