Waterford Distillery is based in County Waterford, Ireland, and it sits firmly in the modern wave of Irish whisky — but with a very specific focus. This isn’t about triple distillation softness or easy blends. Waterford is about barley, farms, and flavour differences you can actually taste.
Founded in 2015 by Mark Reynier (formerly of Bruichladdich), Waterford was built around one idea: that barley variety and farm origin matter just as much as region does in wine. The distillery works with individual Irish farms and bottles whiskies that often highlight a single farm’s crop. That’s unusual. Most distilleries blend barley from multiple sources without mentioning it.
For UK drinkers who enjoy single malt Scotch and want something intellectually interesting — but still drinkable — Waterford offers a different angle. It’s Irish single malt, but structured, cereal-driven, and often bottled at higher strengths than traditional Irish whiskey.
It doesn’t try to be smoky or flashy. It tries to show grain character clearly.
