Ironroot Republic is a bold name in Texas whiskey, founded in 2014 by brothers Jonathan and Robert Likarish in Denison, Texas. It’s a newer distillery, but it’s already built a reputation for its innovative approach to crafting bourbon and corn whiskies. The Likarish brothers, who come from backgrounds in engineering and law, sought to bring a modern twist to American whiskey while still respecting its rich heritage.
What sets Ironroot apart is its commitment to using heirloom grains, particularly varieties of corn that aren’t typically seen in mainstream whiskies. They use French distilling techniques like élevage — a process of managing the barrels in ways influenced by wine-making practices — to create more depth and complexity in their spirits, while the extreme Texas climate gives the whisky a unique, bold character.
