A brief History

Wolfburn, Highlands Region, Scotland. Founded in 2013.

Wolfburn Distillery: Quiet Power from the Edge of Scotland

Right at the top of mainland Scotland, where the land thins out and the air feels sharper, you’ll find Wolfburn Distillery. It’s remote, calm, and a little wild — which feels exactly right once you taste the whisky. Wolfburn isn’t chasing trends or quick wins. It’s building character slowly, one cask at a time.

Located just outside Thurso in Caithness, Wolfburn takes its name from a long-lost distillery that once stood nearby in the 1800s. The modern version opened in 2013, making it one of Scotland’s newer distilleries — but you’d never call its whisky young in style. Everything here is done with care. Small batches. Long fermentations. Slow distillation. No shortcuts.

What I like about Wolfburn is its restraint. The whiskies don’t shout. They don’t rely on heavy peat or wine cask tricks. Instead, you get clean spirit, coastal freshness, and a steady build of flavour. For UK drinkers who enjoy modern Scotch that still feels honest and traditional, Wolfburn sits in a very comfortable spot. It’s a distillery that rewards patience — both theirs and yours.

Flavour Profile:

Oaky / Woody

Malty / Cereal
Sweet

Wolfburn is known for its clean, well-balanced Highland-style single malts, often shaped by refill and second-fill casks rather than aggressive wood.

Wolfburn whiskies often open with soft cereal sweetness and light honeyed notes. Citrus keeps things fresh, while gentle oak adds structure without dryness. Even the lightly peated releases stay calm and controlled, never overpowering the spirit.

Top 4 Flavour Profile Ingredients

Honey

Malt / Biscuit / Toast
Citrus (Lemon / Orange Zest)
Oak / Wood Spice

Wolfburn’s core range is small, focused, and consistent. Each bottling shows a slightly different side of the distillery without losing its identity.

Whisky Style What You’ll Find
Wolfburn Northland Unpeated Single Malt Honey, malt, citrus, gentle oak
Wolfburn Aurora Single Malt Fruit, sweetness, light spice
Wolfburn Langskip Lightly Peated Soft smoke, cereal, vanilla
Wolfburn Morven Peated Single Malt Coastal smoke, oak, subtle sweetness
Wolfburn Warehouse No.1 (Limited) Single Malt Richer cask influence, deeper texture

None of these feel rushed. Even the younger whiskies show balance, which says a lot about how the spirit is made.

Distillery Facts

Overview & History

Wolfburn Distillery is located in Thurso, Caithness, in the far north of Scotland, and was founded in 2013.

The modern distillery revives the name of the original Wolfburn Distillery, which operated in the 19th century and was once considered one of the largest distilleries in Caithness before closing in the 1860s.

The new Wolfburn was built close to the site of the original distillery and focuses on traditional, small-scale whisky production.

Production

  • Spirit Type: Single malt Scotch whisky
  • Region: Highlands
  • Stills: Copper pot stills
  • Water Source: Wolf Burn stream
  • Cask Policy: Bourbon, sherry, and wine cask maturation

The distillery operates with relatively long fermentation and slow distillation to encourage a lighter, fruit-forward spirit.

Whisky Style

Wolfburn whisky typically shows:

  • Light to medium body
  • Sweet malt and honey
  • Orchard fruit and citrus
  • Gentle maritime influence
  • Soft spice and oak

Some releases also introduce peat smoke and heavier sherry influence.

Key Expressions

  • Wolfburn Northland – Core bourbon-led expression
  • Wolfburn Aurora – Sherry-influenced release
  • Wolfburn Morven – Lightly peated style
  • Limited single cask and special editions

The range explores different cask styles while maintaining a soft core profile.

Significance

Wolfburn is part of the modern revival of small independent Scotch distilleries, particularly in northern Scotland.

Its resurrection of a historic distillery name reflects a broader trend in Scotch whisky toward reconnecting with lost regional distilling heritage.
