Founded recently in 2016 in London, Bimber distillery takes pride in its single malt whisky. Its first release in 2019 was composed of only 1,000 bottles, which sold out in just three hours. With the use of traditional methods and homage to London’s culture, this is not a whisky to miss.

Bimber Distillery

Bimber distillery sources its locally grown barley from a single farm. The production process starts with traditional floor malting, a method not often used nowadays. It then undergoes a slow fermentation before being distilled in copper pots, matured and assessed.

We recommend pairing Bimber whisky with a spicy main, such as an Indian curry, or grilled meat. Indulge in a caramel or toffee dessert to enhance the sweetness of the whisky. For a snack or afternoon treat, try aged cheddar or a bowl of nuts and dried fruits.

What is Bimber Whisky?

Bimber is an English single malt whisky made using traditional distilling methods. The distillery grows its own barley on their farm and it is then later fermented. Bimber whisky was first put in casks in May 2016. They released a limited batch of 1,000 bottles three years later, which were popular amongst whisky drinkers.

Where is Bimber Whisky distilled?

Bimber whisky is distilled in London in England. The distillery is located in Park Royal, West London. The founders, Dariusz and Ewelina, moved from Poland to the UK in 2003 and set up Bimber Distillery twelve years later in 2015.

Do you have limited editions or special releases?

Yes, we have a range of special and limited releases of Bimber whisky. This includes The Spirit of the Underground series, which features limited-edition single malt whiskies. Each release represents a different station on the London Underground network. We also have bottles from their Four Elements series, which was released throughout 2023. These special releases are inspired by the natural elements of fire, earth, air and water.
